Ingredients

  • 1 lb pasta (any type you prefer)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 cups cabbage, diced or shredded
  • 3 Persian cucumbers, sliced
  • 1 cup fresh basil
  • 1 large avocado
  • Juice and zest of 1 large lemon
  • 3 tbsp nutritional yeast
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and cool by mixing with ice cubes and a drizzle of olive oil.
  2. In a blender, combine basil, avocado, nutritional yeast, garlic, lemon juice, and salt. Blend until smooth.
  3. In the cooled pasta pot, mix in chickpeas, cabbage, cucumbers, and pour in the dressing. Toss well to combine.
  4. Adjust seasoning if necessary before serving.
