  • 1 (12 oz) package prepared chocolate chip cookie dough
  • 35 caramels
  • 1 tablespoon evaporated milk
  • 1 tablespoon water
  • 1/3 cup unsalted butter
  • 1 1/4 cup white sugar
  • 1/2 cup evaporated milk (for nougat)
  • 1 (7 oz) jar vegan marshmallow cream
  • 1/4 cup peanut butter
  • 1 cup semisweet chocolate chips
  • 1/4 cup heavy whipping cream
  • 3/4 cup rice krispies cereal

Instructions

  1. Preheat oven to 350°F. Grease a 9×9-inch baking pan and press the cookie dough evenly into the bottom. Bake for 13-15 minutes until golden. Let cool completely.
  2. In a saucepan over medium heat, combine caramels, evaporated milk, and water. Stir until smooth and pour over the cooled cookie crust. Freeze for 10 minutes.
  3. In the same saucepan, melt butter, sugar, and evaporated milk together. Bring to a boil while stirring constantly; simmer without stirring for 10 minutes.
  4. In a bowl, whisk together vegan marshmallow cream and peanut butter; then mix in the boiled mixture until smooth.
  5. Pour nougat filling over caramel layer and freeze for another 10 minutes.
  6. For ganache, heat cream until hot but not boiling; pour over chocolate chips and stir until melted. Mix in rice krispies and spread over nougat layer.
  7. Refrigerate for at least 2 hours before cutting into bars.
