  • ⅓ cup white granulated sugar

  • ¼ cup full-fat sour cream (room temperature)
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1 cup powdered sugar (for glaze)
  • 3 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch baking pan.
  2. In a mixing bowl, combine chopped apples, light brown sugar, cinnamon, and ginger.
  3. In another bowl, whisk together the egg, granulated sugar, vegetable oil, sour cream, and vanilla until smooth.
  4. In a separate bowl, sift together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in the apple mixture gently.
  6. Pour the batter into the prepared pan and bake for about 55 minutes or until a toothpick inserted comes out clean.
