  • 2 tablespoons olive oil

  • Salt and pepper to taste
  • 2 large sweet potatoes (peeled and cubed)
  • 2 tablespoons butter (for sweet potatoes)
  • ¼ cup heavy cream or milk

Instructions

  1. In a mixing bowl, marinate the beef medallions with ½ cup apple cider, garlic, thyme, salt, and pepper for at least 15 minutes.
  2. Boil salted water in a pot; add cubed sweet potatoes and cook until tender (15-20 minutes).
  3. Heat olive oil in a skillet over medium-high heat; sear the marinated beef medallions for about 3-4 minutes on each side until browned.
  4. Sauté sliced onions in the same skillet until softened, then pour in reserved marinade and remaining apple cider to simmer.
  5. Return beef to the skillet and cover; cook until the internal temperature reaches 145°F (63°C).
  6. Stir butter and cream into drained sweet potatoes; mash until smooth.
  7. Serve plated mashed sweet potatoes topped with apple cider beef and drizzle sauce over.
