  • 3 tbsp granulated sugar
  • 1 ¾ cups all-purpose flour
  • 2 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • ¾ cup light brown sugar, packed
  • 2 egg yolks
  • 2 tsp vanilla
  • 6 oz cream cheese
  • 2 tbsp apple cider reduction
  • ¼ cup granulated sugar for topping
  • ¼ tsp ground cinnamon for topping
  • ⅛ tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Boil apple cider in a saucepan until reduced to ½ cup.
  2. Beat cream cheese and sugar until smooth; mix in vanilla and apple cider reduction.
  3. Cream together butter and brown sugar; add egg yolks and vanilla.
  4. Combine dry ingredients; gradually mix into wet ingredients until just combined.
  5. Preheat oven to 350°F (175°C). Scoop dough onto baking sheets; create indentations for filling.
  6. Fill centers with cheesecake mixture; cover with more dough if desired.
  7. Bake for about 11 minutes until edges are golden; brush with melted butter and sprinkle with spiced sugar.
