  • 20 tablespoons unsalted butter
  • 2½ cups all-purpose flour
  • 2 teaspoons apple pie spice or pumpkin spice
  • 1 large egg (room temperature)
  • 1¼ cup light brown sugar
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • Ground cinnamon (for topping)

Instructions

  1. In a saucepan, simmer apple cider over medium heat until reduced to about ¼ cup. Let cool completely.
  2. Melt butter on low heat until browned. Cool for about 15 minutes.
  3. In a mixing bowl, whisk together flour, baking powder, and spices.
  4. In another bowl, mix browned butter with light brown sugar and granulated sugar. Add egg and reduced cider; mix well.
  5. Gradually add dry ingredients to wet mixture; stir until just combined.
  6. Using a cookie scoop, drop dough onto a lined baking sheet about 2 inches apart.
  7. Preheat oven to 375°F (190°C) and bake cookies for 9–11 minutes until edges are set but centers remain soft.
  8. Cool slightly before rolling in ground cinnamon sugar.
