  • 1 cup reduced apple cider
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • Generous pinch of ground cloves
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, room temperature
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • ½ teaspoon ground cinnamon (for coating)
  • ½ cup confectioners’ sugar (for glaze)
  • 1 Tablespoon reduced cider (for glaze)

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it thickens to about 1/4 cup (10–15 minutes). Cool.
  2. In a bowl, whisk together flour, cinnamon, cloves, baking soda, and salt.
  3. In a mixer, cream butter with sugars until fluffy. Add egg, vanilla, and three tablespoons of reduced cider; mix well.
  4. Gradually add dry ingredients; mix until just combined.
  5. Chill dough in the refrigerator for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Combine remaining sugar and cinnamon in a bowl for coating.
  8. Scoop dough into balls, roll in cinnamon-sugar mixture, and place on the baking sheet with space between them.
  9. Bake for about 10 minutes until edges are set but centers remain soft.
  10. Cool on the pan for five minutes before transferring to wire racks.
  11. Whisk together the confectioners’ sugar with one tablespoon of remaining reduced apple cider and drizzle over cooled cookies before serving.
