  • 3 1/24 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon cinnamon
  • 6 tablespoons salted butter, at room temperature
  • 2 Honeycrisp apples, chopped
  • 4 tablespoons salted butter, at room temperature
  • 6 ounces cream cheese, at room temperature
  • 1/4 cup maple syrup
  • 23 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. In a stand mixer, combine warm milk, yeast, and brown sugar. Let sit until bubbly (5-10 minutes).
  2. Add butter, eggs, flour (starting with 3 ½ cups), and salt. Mix until incorporated and knead until smooth.
  3. Cover the bowl and let the dough rise at room temperature for 1 hour until doubled in size.
  4. Prepare filling by mixing brown sugar, granulated sugar, and cinnamon in a bowl.
  5. Roll out the dough into a rectangle. Spread softened butter over it, then sprinkle with chopped apples and cinnamon sugar mixture.
  6. Roll tightly from one edge to form a log and cut into 12-15 rolls.
  7. Place in a greased baking dish and let rise again for 20-30 minutes.
  8. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  9. For icing, melt butter until browned; whisk with cream cheese, maple syrup, powdered sugar, and vanilla extract.
  10. Drizzle icing over warm rolls before serving.
