  • 3 medium eggs (beaten)
  • 1/2 green cabbage (about 1 pound)
  • 1 medium carrot (cut into matchsticks)
  • 2 tablespoons onion (diced small)
  • 2 garlic cloves (minced)
  • 1 tablespoon light soy sauce
  • 2 teaspoons dark soy sauce
  • 4 tablespoons olive oil
  • Salt to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add beaten eggs and scramble until cooked through; transfer to a plate.
  2. In the same skillet, add another tablespoon of olive oil, then sauté diced onion and minced garlic until fragrant.
  3. Add remaining olive oil and chopped cabbage with carrot. Cook covered for 3–4 minutes until tender yet crisp.
  4. Stir in light soy sauce, dark soy sauce, and adjust seasoning with salt as needed.
  5. Return scrambled eggs to the skillet, mixing everything together thoroughly.
