  • 2 tablespoons extra virgin olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, grated
  • 1½ pounds asparagus (fresh or frozen)
  • ¾ teaspoon salt (or more to taste)
  • â…› teaspoon black pepper
  • ½ cup grated parmesan cheese (or more to taste)
  • ½ cup fresh basil
  • Juice and zest of ½ lemon

Instructions

  1. Prepare the asparagus by cutting off the woody ends and slicing the spears into discs while keeping the tips whole.
  2. In a large skillet, heat olive oil over medium heat and sauté the onion for about 3 minutes.
  3. Add the asparagus discs, garlic, salt, and pepper; cook until bright green and fork-tender (about 5 minutes). Add water to help steam if needed.
  4. Blend half of the cooked asparagus mixture with basil, parmesan, lemon juice, and a bit of water until creamy.
  5. Cook your chosen pasta according to package instructions until al dente.
  6. Combine the blended sauce with the remaining asparagus in the skillet. Drain pasta but reserve some cooking water; add to skillet and stir well, adjusting creaminess with reserved water as needed.
