  • 2 tablespoons Olive oil or vegetable oil
  • 1 cup Long-grain white rice
  • 48 ounces Canned tomato sauce
  • 2 cups Water
  • 1 teaspoon Minced garlic
  • 2 teaspoons Caldo de Tomate (tomato bouillon)
  • 1 teaspoon Chili powder

Instructions

  1. Heat 2 tablespoons of olive oil in a 3-quart sauté pan over medium heat. Add 1 cup of long-grain white rice and stir frequently for 3-5 minutes until golden.
  2. Stir in 1 teaspoon of minced garlic, 2 teaspoons of Caldo de Tomate, and 1 teaspoon of chili powder.
  3. Pour in 2 cups of water and 4-8 ounces of canned tomato sauce; mix well.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for about 20 minutes until water is absorbed.
  5. Turn off heat and let rice rest covered for an additional 5-10 minutes.
  6. Fluff with a fork before serving.
