- 2 lemons, sliced into thin rounds
- 1 pound mahi mahi fillets
- 2 tablespoons melted butter
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 2 tablespoons finely chopped parsley (for garnish)
- Preheat the oven to 400°F (200°C).
- Line a rimmed baking sheet with aluminum foil and arrange lemon slices on it.
- Place the mahi mahi fillets on top of the lemon slices and brush both sides with melted butter.
- In a small mixing bowl, combine all seasonings and sprinkle generously over the fish.
- Bake in the preheated oven for about 10 minutes. For a crispy finish, broil for an additional 1½ minutes.
- Remove from the oven and garnish with chopped parsley before serving hot.
