  • 56 medium sweet potatoes (peeled & sliced into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into thin medallions and arrange them in a baking dish.
  3. In a medium saucepan, combine butter, brown sugar, water, spices, and salt over medium heat until melted and smooth.
  4. Brush three-quarters of the sauce over the sweet potato medallions. Cover with foil and bake for 45-50 minutes until tender.
  5. Remove the foil, drizzle remaining sauce over the potatoes, and sprinkle with chopped pecans and mini marshmallows.
  6. Broil for 1-2 minutes until marshmallows are golden-brown.
  7. Allow cooling for about 10-15 minutes before serving.
