  • 32 Biscoff cookies
  • 1 cup salted butter (cold, cubed)
  • 1 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup Biscoff cookie butter
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups white chocolate chips

Instructions

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper.
  2. In a food processor, pulse half of the Biscoff cookies into fine crumbs and set aside the rest for decoration.
  3. Cream together cold cubed butter, brown sugar, and granulated sugar for about 3-4 minutes until light and fluffy.
  4. Add eggs one at a time along with vanilla extract; mix until combined.
  5. Incorporate the Biscoff cookie butter and mix until fully blended.
  6. Gradually add flour, reserved cookie crumbs, cornstarch, baking soda, baking powder, and salt until just combined.
  7. Gently fold in broken Biscoff cookies and white chocolate chips.
  8. Use a cookie scoop to form dough balls and place them on the prepared baking sheets.
  9. Bake for 8-10 minutes until edges are set but the center is slightly underbaked.
  10. Press reserved cookie halves and extra chocolate chips into each cookie before cooling.
