  • 1 pint fresh blueberries
  • ¼ cup granulated sugar
  • 1 lemon, juiced
  • 1 small bunch lemon thyme sprigs, tied in kitchen twine
  • 8 slices sourdough bread, ¼” thick
  • 4 oz white cheddar cheese, shredded
  • 4 oz block mozzarella cheese, shredded
  • 4 tbsp butter
  • flaky sea salt

Instructions

  1. Prepare the blueberry jam by combining fresh blueberries, sugar, lemon juice, and lemon thyme in a saucepan over medium-high heat. Bring to a boil, then simmer for 20 minutes until thickened. Remove thyme sprigs and cool.
  2. Assemble sandwiches by spreading cooled blueberry jam on slices of sourdough, topping with shredded white cheddar and mozzarella, then closing each sandwich.
  3. In a preheated cast iron skillet over medium heat, melt butter and cook sandwiches for 2-3 minutes per side until golden brown and cheese melts.
  4. Slice in half and sprinkle with flaky sea salt before serving.
