  • 1/2 cup brown sugar
  • 4 tablespoons maple syrup
  • 3 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 3/4 teaspoon fine sea salt
  • 1/2 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • 4 tablespoons unsalted butter (softened)
  • 2 oz cream cheese (room temperature)
  • 3/4 cup powdered sugar

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the candied turkey bacon by mixing brown sugar, maple syrup, and black pepper in a bowl. Coat the bacon strips with this mixture and bake for about 30 minutes until crispy. Cool and chop some into strips for topping.
  3. Make tangzhong by whisking together water and flour in a saucepan over medium heat until it becomes paste-like.
  4. In a mixing bowl, combine flour, granulated sugar, yeast, and salt. Add egg, milk, and tangzhong; knead until smooth.
  5. Let the dough rise in a warm place until doubled in size (about an hour).
  6. Roll out the dough into a rectangle and spread softened butter on top. Sprinkle with brown sugar, cinnamon, and chopped bacon.
  7. Cut into strips, roll tightly into logs, and place in a baking pan lined with parchment paper.
  8. Let rise again until doubled (about an hour) before baking at 325°F (162°C) for approximately 24-30 minutes.
  9. For the glaze, mix softened butter with cream cheese; add powdered sugar and maple syrup until smooth.
  10. Top warm rolls with glaze and sprinkle reserved candied bacon before serving.
