  • 1 lb chicken sausage (browned)
  • 2 cups shredded cheddar cheese
  • 8 8-inch flour tortillas
  • 6 eggs
  • 2 cups half-and-half
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F. Spray a 13×9 inch baking dish with cooking spray.
  2. In a large bowl, combine browned chicken sausage, 1 cup of cheddar cheese, and half of the bacon bits.
  3. Place about 1/8 of the mixture in each tortilla, roll tightly, and place seam side down in the dish.
  4. In another bowl, whisk together eggs, half-and-half, flour, and salt until smooth; pour over the filled tortillas.
  5. Top with remaining cheese and bacon bits. Cover with foil and bake for about 35 minutes; uncover and bake an additional 10 minutes until golden and bubbly.
