  • 1 lb turkey sausage (browned)
  • 2 cups shredded cheddar cheese
  • 8 8-inch flour tortillas
  • 6 eggs
  • 2 cups half-and-half
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 13×9 inch baking dish with cooking spray.
  2. In a large bowl, combine browned turkey sausage, 1 cup of cheddar cheese, and half of the bacon bits.
  3. Place about 1/8 of the mixture down the center of each tortilla, roll tightly, and place seam side down in the prepared baking dish.
  4. In another bowl, whisk together eggs, half-and-half, flour, and salt until smooth. Pour over the assembled enchiladas.
  5. Sprinkle remaining cheese and bacon bits on top. Cover with foil and bake for 35 minutes; uncover and bake for an additional 10 minutes until set.
