  • 1 pound ground beef or turkey sausage
  • 1/4 cup salsa
  • 12 cups frozen potatoes o’brien (with onions and peppers)
  • 8 flour tortillas
  • 6 large eggs
  • 1 1/4 cup half-and-half
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon Kosher salt
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey or pepper jack cheese

Instructions

  1. Preheat the oven to 350°F and prepare a nonstick baking dish.
  2. In a frying pan, brown the sausage; drain fat and mix with salsa and cheeses.
  3. Heat potatoes in the same pan; combine with sausage mixture.
  4. Fill each tortilla with the mixture, roll tightly, and place seam side down in the dish.
  5. In a bowl, whisk together eggs, half-and-half, flour, and salt; pour over tortillas and top with remaining cheese.
  6. Cover with foil and bake for about 35 minutes; remove foil and bake an additional 10 minutes until set.
