1 ½ pounds fresh broccoli (cut into bite-size pieces)
½ cup finely chopped red onion
½ cup dried cranberries
½ cup roasted sunflower seeds
1 cup mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons honey
2 teaspoons Dijon mustard
Instructions
Preheat your oven to 400°F. Line a baking sheet with foil and place chicken slices in one layer. Bake for 12-20 minutes until cooked through. Once cool, chop into bite-size pieces.
In a large mixing bowl, combine broccoli, red onion, cranberries, and sunflower seeds; toss gently.
In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
