  • ½ cup finely chopped red onion
  • ½ cup dried cranberries
  • ½ cup roasted sunflower seeds
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 teaspoons Dijon mustard

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with foil and place chicken slices in one layer. Bake for 12-20 minutes until cooked through. Once cool, chop into bite-size pieces.
  2. In a large mixing bowl, combine broccoli, red onion, cranberries, and sunflower seeds; toss gently.
  3. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
