  • 23 medium potatoes
  • 500 grams lean beef mince
  • 2 tablespoons olive oil (divided)
  • Lettuce (shredded)
  • Cheese (dairy-free or regular)
  • Pickle slices
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (dijon or yellow)
  • 1 teaspoon pickle juice (from the jar of pickles)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano or mixed herbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Mix spice ingredients and set aside. Cut potatoes into chips and toss with olive oil and half the spice mix.
  3. Bake potatoes on a tray for 30–40 minutes until golden and crispy.
  4. In a frying pan, heat remaining olive oil over high heat; add beef mince and cook until browned. Stir in remaining spice mix.
  5. Combine all burger sauce ingredients in a bowl.
  6. Assemble bowls: layer with crispy potato chips, shredded lettuce, cooked beef mince, cheese, pickle slices, and drizzle with burger sauce.
