  • 2 tsp vegetable oil
  • 1 lb lean ground beef
  • Salt and pepper to taste
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 (8 oz) cans tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat vegetable oil in a Dutch oven over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned.
  2. Stir in diced onion and minced garlic; sauté for an additional 2-3 minutes until tender.
  3. Add chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar. Mix well.
  4. Bring the mixture to a simmer over medium heat and cook for about 25 minutes or until the rice is tender.
  5. Remove the bay leaf before serving and garnish with fresh parsley.
