  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • 3 tablespoons butter
  • 2 teaspoons Cajun seasoning
  • 10 oz. diced tomatoes with green chilies
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 12 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 3 tablespoons flour
  • ¾ cup cheddar jack cheese (shredded)
  • 2 teaspoons lime juice
  • Lime wedges
  • Fresh cilantro (roughly chopped)

Instructions

  1. Season chicken breasts with Cajun seasoning on both sides.
  2. In a skillet over medium heat, heat olive oil and cook chicken for 6-7 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in flour to form a roux.
  4. Gradually whisk in chicken broth and heavy cream until smooth. Add honey, hot sauce, Cajun seasoning, and other spices; simmer for 5 minutes.
  5. Mix in diced tomatoes and return chicken to skillet; cover with sauce and cook for an additional 5 minutes.
  6. Sprinkle cheese over chicken; cover until melted.
  7. Drizzle lime juice before serving. Enjoy!
