  • 1 green bell pepper
  • ½ yellow onion
  • 3 cloves garlic
  • 1 tablespoon Cajun seasoning

  • 1 ½ cups chicken broth
  • 1 tablespoon cooking oil

  4. Pour in diced tomatoes, rice, and chicken broth. Bring to a boil, then cover and reduce heat to low.
  5. Simmer covered for about 20 minutes, ensuring the rice absorbs all liquid.
  6. Remove from heat but leave covered for an additional 5 minutes before fluffing the rice gently to mix ingredients.
