  • 1/2 red bell pepper (seeded and diced)
  • 1/2 green bell pepper (seeded and diced)
  • 1/2 yellow onion (diced)
  • 3 1/4 cup low-sodium chicken broth
  • 1 1/4 teaspoon Kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground thyme
  • 1 teaspoon ground paprika
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 1/2 cup long-grain white rice

Instructions

  1. In a medium-sized saucepan over medium-high heat, melt the unsalted butter.
  2. Add the diced red and green bell peppers and yellow onion; sauté for 5-7 minutes until softened.
  3. Pour in the low-sodium chicken broth and add garlic powder, ground thyme, paprika, black pepper, and bay leaf. Bring to a boil.
  4. Stir in the long-grain white rice; cover with a lid and reduce heat to maintain a simmer.
  5. Cook for 20-25 minutes until the rice is tender; let it rest covered for 10 minutes before fluffing with a fork.
