  • 1 pound chicken breasts (cut into cubes)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 1/2 cups white long grain rice (rinsed)
  • 2 cups chicken stock
  • 3 cups broccoli florets (roughly chopped)
  • 1/2 cup milk
  • 2 cups sharp cheddar cheese (shredded)

Instructions

  1. Cut chicken into cubes, season with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and brown the chicken for about 5-7 minutes. Remove from pan.
  3. Sauté onion in the same pan until soft, then add garlic and cook for an additional 30 seconds.
  4. Return chicken to the pan; add rinsed rice, chicken stock, and water. Bring to a boil, then reduce heat to simmer and cover for 10 minutes.
  5. Stir in broccoli, cover again, and continue cooking until rice is tender.
  6. Preheat oven to 425°F. Stir in milk and one cup of cheese until combined. Top with remaining cheese and bake for 10-15 minutes until bubbly.
