  • 1 head cauliflower (chopped into florets)
  • 2 slices beef (chopped)
  • 1 tbsp olive oil
  • 1/4 cup yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup almond milk (or milk of choice)
  • 2 tbsp all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • 1/2 tsp salt
  • 2 tbsp chives (chopped)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large deep skillet over medium heat, cook chopped beef until browned; set aside.
  3. Boil chopped cauliflower in a large saucepan for about 5 minutes until tender; drain.
  4. In the same skillet, add olive oil, onion, and garlic; sauté until soft.
  5. Whisk almond milk and flour together, then add to the skillet. Bring to a low boil and stir in cheeses until melted.
  6. Fold in cooked cauliflower and combine well.
  7. Pour mixture into an 8×8 baking dish, top with reserved beef if desired, and bake for about 20 minutes. Sprinkle with chives before serving.
