  • 2 pounds ground beef
  • 2 cups shredded cheddar cheese
  • 2 large Idaho potatoes
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup chopped carrots
  • 1 cup chopped onions
  • 2 teaspoons minced garlic
  • 2 tablespoons olive oil (divided)
  • ¼ cup sliced scallions
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 teaspoons dried oregano

Instructions

  1. Preheat oven to 375°F and lightly oil a shallow baking dish.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Sauté carrots, onions, and garlic in the same skillet until tender. Add the beef back along with scallions, salt, pepper, oregano, chicken broth, sour cream, and half the cheese. Simmer for three minutes.
  4. Squeeze excess moisture from grated potatoes, then toss with remaining oil and seasonings.
  5. Spread the beef mixture in the baking dish, layer the seasoned potatoes on top, then bake for 40-50 minutes until golden brown. Add remaining cheese on top and bake for an additional five minutes.
