  • ¾ cup finely chopped pecans
  • ¼ cup fruit juice
  • ¼ cup finely chopped maraschino cherries
  • ½ cup butter (softened)
  • 4 cups powdered sugar
  • 3 cups semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil
  • 30 candied cherry halves

Instructions

  1. In a bowl, combine the finely chopped pecans and fruit juice. Let sit for at least 1 hour to absorb flavors.
  2. In a large bowl, beat softened butter and gradually mix in powdered sugar until smooth.
  3. Stir in the pecan mixture and chopped maraschino cherries until well combined.
  4. Shape the mixture into 1-inch balls and refrigerate for at least 1 hour.
  5. Melt semi-sweet chocolate chips with shortening or coconut oil in a saucepan over low heat, stirring frequently.
  6. Coat each chilled ball in the chocolate mixture using forks or toothpicks and place them on parchment paper.
  7. Top each ball with a candied cherry half and refrigerate until set.
