Ingredients

Scale
  • 2 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1 cup unsalted butter (softened)
  • 1 egg (room temperature)
  • 2 tsp vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  3. In a large bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy (about 1-2 minutes).
  4. Add the egg and vanilla extract; mix until pale and fluffy (about another 1-2 minutes).
  5. Gradually incorporate the dry mixture into the wet mixture on low speed until just combined.
  6. Scoop dough into balls using a tablespoon measure, roll in granulated sugar, and place on prepared baking sheets about 2 inches apart.
  7. Slightly flatten each ball before baking.
  8. Bake for 9-10 minutes or until lightly golden around the edges. Allow cooling on the sheets for about 5 minutes before transferring to a cooling rack.
