  • 1 pound boneless skinless chicken breasts
  • 1 pound uncooked pasta (farfalle recommended)
  • 3 Romaine lettuce hearts (12 ounces), roughly chopped
  • 1 ½ cups Caesar dressing
  • Parmesan cheese, for topping
  • 2 cloves garlic, pressed or minced
  • ½ cup Panko breadcrumbs

Instructions

  1. Bring a large pot of salted water to boil.
  2. In a sauté pan over medium heat, melt butter and sauté garlic for 1 minute. Add Panko breadcrumbs and season with salt and pepper; cook until golden brown.
  3. Season chicken with salt and pepper. In the same sauté pan, heat olive oil and cook the chicken until no longer pink inside (about 4-5 minutes per side). Let rest before slicing.
  4. Cook pasta until al dente; drain and rinse under cold water.
  5. In a large mixing bowl, combine pasta, lettuce, sliced chicken, and Caesar dressing; toss gently.
  6. Serve garnished with garlic breadcrumbs and Parmesan cheese.
