  • 4 chicken breasts (about 800g)
  • 680g passata
  • 400g black beans (drained and rinsed)
  • 1 onion (peeled and chopped)
  • 340g tinned sweetcorn (drained)
  • 6 tortilla soft wraps
  • 250g grated cheese
  • 2 tsp garlic powder
  • 2 tsp ground cumin
  • 1 tsp oregano
  • 1/2 tsp mild chili powder
  • Salt and freshly ground black pepper

Instructions

  1. Combine all ingredients in the slow cooker and mix well.
  2. Cook on HIGH for 4 hours or LOW for 6 hours until chicken is thoroughly cooked.
  3. Shred the chicken in the slow cooker using two forks. Stir in sweetcorn and add tortilla strips.
  4. Sprinkle grated cheese on top and cook for an additional 40 minutes on HIGH until melted or place under a hot grill for about 10 minutes.
