  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cup buttermilk
  • 1 egg
  • Hot sauce (to taste)
  • Oil for frying
  • 1/4 cup reserved oil from frying for gravy
  • 1/3 cup flour for gravy
  • 2 cups milk for gravy

Instructions

  1. Heat oil in a deep fryer or large pan to 325°F.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
  3. In another bowl, mix buttermilk, egg, and hot sauce until smooth.
  4. Dredge each piece of chicken in the flour mixture, dip in the egg mixture, and coat again in flour.
  5. Fry chicken in hot oil for 3-5 minutes on each side until golden brown. Drain on paper towels.
  6. For gravy, heat reserved oil from frying, stir in flour until absorbed, then gradually add milk while whisking until thickened; season with salt and pepper.
