  • 1 lb chicken tenderloins
  • Salt and pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 stick butter
  • 2 tablespoons minced garlic
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup dry white grape juice
  • 1 1/2 cups uncooked white rice
  • 3 cups chicken broth
  • 1/2 cup fresh grated parmesan cheese

Instructions

  1. Season chicken tenders with salt, pepper, and garlic powder. Heat olive oil in a nonstick skillet over medium heat. Sauté chicken until browned and cooked through, about 5-7 minutes. Remove and cover.
  2. In the same skillet, add half the butter, minced garlic, red pepper flakes, and salt; sauté until fragrant (about 3 minutes).
  3. Increase heat to medium-high and add grape juice; stir well to combine. Cook until reduced by half.
  4. Add uncooked rice to the skillet; cook for 3-4 minutes until slightly browned. Pour in chicken broth and remaining salt.
  5. Bring to a low boil; cover and reduce heat to medium-low. Cook for approximately 20 minutes or until rice is tender.
  6. Sprinkle parmesan over rice, place chicken on top, drizzle with reserved sauce, cover, let stand for 5 minutes before serving.
