  • 1 kg chicken thigh fillets, skinless and boneless
  • 1 large garlic clove, minced
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp ground cardamom
  • 2 tsp smoked paprika
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 cup Greek yogurt
  • Flatbreads (Lebanese or pita)
  • Fresh lettuce, tomato slices, red onion

Instructions

  1. In a large ziplock bag, mix marinade ingredients. Add chicken, seal the bag, and massage to coat well. Marinate for at least 3 hours or overnight.
  2. In a mixing bowl, combine yogurt sauce ingredients. Mix until smooth and refrigerate until needed.
  3. Preheat a non-stick skillet or BBQ grill over medium-high heat with olive oil.
  4. Cook marinated chicken for about 4-5 minutes per side until fully cooked and charred.
  5. Let the chicken rest for five minutes before slicing into strips.
  6. Serve with flatbreads and toppings of your choice.
