  • 500g (1 lb) spaghetti or other long pasta
  • 500g (1 lb) skinless boneless chicken thighs
  • 500g (1 lb) sliced mushrooms
  • 2 minced garlic cloves
  • 1 finely chopped onion
  • 6 tbsp unsalted butter
  • 4 tbsp flour
  • 2 cups milk
  • 1 cup cream (or more milk)
  • 2 cups low-sodium chicken broth
  • Salt and black pepper to taste
  • 2 cups shredded cheese (cheddar, jack, colby)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, melt butter and sauté chicken until golden brown. Remove from skillet.
  3. In the same skillet, add more butter if necessary and sauté onion and garlic until fragrant. Add sliced mushrooms; cook until soft.
  4. Stir in flour to create a roux; whisk in milk and cream gradually. Let simmer until thickened, then add chicken broth, salt, and pepper.
  5. In a large bowl, combine cooked pasta, sautéed chicken mixture, and sauce until well-coated.
  6. Preheat oven to 350°F (175°C). Transfer to a baking dish, top with cheese, and bake for about 30 minutes until bubbly.
