  • 1.5 to 2 pounds sweet potatoes (peeled and diced)
  • 1 large red onion (cut into wedges)
  • 4 tablespoons olive oil
  • 1/3 to 1/2 cup light brown sugar
  • 2 to 3 tablespoons chili powder
  • 2 teaspoons cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F.
  2. Place sweet potatoes on a baking sheet, drizzle with 2 tablespoons of olive oil, season with salt and pepper, and roast for about 8-10 minutes until slightly tender.
  3. In a bowl, mix brown sugar, chili powder, cumin, garlic powder, paprika, and optional cayenne pepper.
  4. Pound the chicken breasts to an even thickness for uniform cooking.
  5. After removing sweet potatoes from the oven, flip them over and add chicken breasts and onion wedges to the sheet. Drizzle with remaining olive oil.
  6. Season everything with salt and pepper; coat chicken with spice rub generously.
  7. Bake for 18-22 minutes until the chicken reaches an internal temperature of 165°F and sweet potatoes are fork-tender.
  8. Let the chicken rest for about 5-10 minutes before slicing and serve garnished with fresh herbs if desired.
