  • 1 (15 ounce) can diced tomatoes (undrained)
  • 1 tablespoon tomato paste
  • 3 cups shredded sharp cheddar cheese
  • 2 cups shredded pepper jack cheese
  • 1 ½ cups heavy whipping cream
  • ½ onion chopped fine
  • 2 cloves garlic
  • 1 (2 ounce) can of green chilies
  • 1 tablespoon cumin
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • salt and pepper to taste
  • 1 bag (13 ounces) salted tortilla chips
  • Green onion
  • Jalapeno
  • 2 tablespoons sour cream

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  2. Add chopped onion and minced garlic; sauté until translucent.
  3. Mix in kidney beans, diced tomatoes, tomato paste, spices; simmer for 10 minutes.
  4. In a saucepan over low heat, melt heavy whipping cream with shredded cheeses until smooth.
  5. Layer tortilla chips on a baking dish; top with chili mixture and drizzle cheese sauce.
  6. Bake in a preheated oven at 350°F (175°C) for about 10 minutes until heated through.
