Ingredients

Scale
  • 2 pounds boneless skinless chicken thighs
  • ½ cup lime juice
  • ¼ cup honey
  • 2 tablespoons chopped cilantro
  • 2 tablespoons minced garlic
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon cayenne pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, combine lime juice, honey, cilantro, garlic, chili powder, cumin, onion powder, salt, and cayenne to make the marinade.
  2. Add chicken thighs to the marinade, cover tightly, and refrigerate for at least 20 minutes (up to 4 hours for deeper flavor).
  3. Preheat your oven to 400°F.
  4. Heat vegetable oil in an oven-safe skillet over medium heat. Sear each side of the chicken for about 2–3 minutes until browned.
  5. Transfer the skillet to the preheated oven and bake for approximately 8–10 minutes or until an internal temperature of 165°F is reached.
  6. Meanwhile, pour the reserved marinade into a saucepan and simmer over medium heat until thickened into a glaze (about 5–10 minutes).
  7. Brush the cooked chicken with the glaze before serving warm.
