  • 1 pound green beans
  • 2 sweet bell peppers
  • 10 ounces shredded carrots
  • 4 green onions
  • 3/4 cup vegetable oil
  • 1/4 cup apple cider vinegar
  • 1/3 cup soy sauce
  • 3 tablespoons honey
  • 2 large garlic cloves, minced
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon toasted white sesame seeds
  • 1/2 cup creamy peanut butter
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • olive oil for seasoning

Instructions

  1. Prepare the dressing by whisking together vegetable oil, apple cider vinegar, soy sauce, sesame oil, honey, garlic, ginger, sesame seeds, peanut butter, salt, and pepper until smooth. Set aside.
  2. Blanch green beans in boiling salted water for 3 to 5 minutes until crisp-tender; transfer to ice water to cool.
