  • 1/4 cup apple cider vinegar
  • 1/3 cup soy sauce
  • 2 tablespoons toasted sesame oil
  • 3 tablespoons honey
  • 2 large garlic cloves (minced)
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon toasted white sesame seeds
  • 1/2 cup creamy peanut butter
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 8 cups shredded cooked chicken
  • 1 pound green beans (or asparagus, and/or sugar snap peas)
  • 2 sweet bell peppers (red, green, yellow, or orange)
  • 10 ounces shredded carrots
  • 4 green onions (thinly sliced)
  • 1 tablespoon toasted white sesame seeds

Instructions

  1. In a medium bowl, whisk together vegetable oil, apple cider vinegar, soy sauce, sesame oil, honey, minced garlic, ginger, and peanut butter until smooth.
  2. Blanch the green beans (or asparagus/sugar snap peas) in boiling salted water for 3-5 minutes until crisp-tender. Transfer to an ice bath to cool.
  3. In a large bowl, combine shredded chicken, blanched vegetables, sliced bell peppers, and shredded carrots. Pour the dressing over and gently toss until well coated.
  4. Top with sliced green onions and sesame seeds before serving.
