  • 1 9” deep dish pie shell
  • 2 cups fresh or frozen raspberries
  • 6 Tbsp sugar, divided
  • 1 Tbsp cornstarch
  • 8 oz cream cheese
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup whipping cream
  • 2 oz semi-sweet chocolate squares
  • 3 Tbsp butter or margarine

Instructions

  1. Prepare the pie shell according to package directions and let it cool.
  2. In a saucepan over medium heat, combine the raspberries, 6 Tbsp sugar, and cornstarch. Stir and bring to a boil for about two minutes. Cool before spreading on the pie shell.
  3. In a bowl, beat cream cheese with remaining sugar and vanilla until fluffy. Whip cream until stiff peaks form and gently fold into the cream cheese mixture. Spread over the cooled raspberry layer and refrigerate.
  4. Melt chocolate with butter until smooth, then pour over the chilled pie. Chill again before serving.
