  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons instant espresso powder
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant espresso powder
  • Chocolate shavings
  • Cocoa powder dusting
  • Whole coffee beans

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, mix crushed cookies with melted butter until combined. Press firmly into the pan bottom and bake for 10 minutes; let cool.
  3. Beat cream cheese, sugar, and cornstarch until smooth. Add eggs one at a time, mixing on low speed.
  4. Whisk heavy cream, sour cream, espresso powder, and vanilla in another bowl; combine with cheesecake batter gently.
  5. Pour over cooled crust; wrap the pan in foil and place it in a water bath.
  6. Bake for 50-55 minutes until edges are set; cool gradually in the oven.
  7. Chill for at least 6 hours before serving and top with whipped cream, cocoa powder, or chocolate shavings.
