  • 2 cups shredded cooked chicken (rotisserie or leftover turkey)
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste black pepper
  • 1/4 cup chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, and sour cream. Mix until well combined.
  3. Add garlic powder, onion powder, salt, and black pepper; stir well.
  4. Transfer the mixture to a greased casserole dish and spread evenly. Top with half of the French fried onions.
  5. Bake for 35 minutes until heated through and bubbly.
  6. Remove from oven and add remaining French fried onions on top; return to bake for an additional 5 minutes until golden brown.
