  • ½ red bell pepper, cut into strips
  • ½ yellow bell pepper, cut into strips
  • ½ green bell pepper, cut into strips

  • 12 ounces angel hair pasta
  • 1 Tablespoon vegetable oil (for frying)
  • 2 tablespoons garlic, minced
  • 1 cup white grape juice
  • 1 cup chicken stock
  • 2 tablespoons lemon juice (approximately 1 large lemon)
  • 4 tablespoons unsalted butter
  • Salt (to taste)

Instructions

  1. Cook the pasta in boiling salted water until just shy of al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, add vegetable oil and sauté the onions and bell peppers until soft.
  3. Add the shrimp to the skillet and cook until pink and opaque.
  4. Stir in minced garlic; then pour in white grape juice and chicken stock. Simmer for about 5 minutes.
  5. Mix in lemon juice and butter until melted.
  6. Combine cooked pasta with the sauce mixture, adding reserved pasta water if needed to reach desired consistency. Season with salt to taste before serving.
