  • 3/4 cup whole milk
  • 1 cup whole milk cottage cheese
  • 2 tablespoons honey (or granulated sugar)
  • 2 1/4 teaspoons instant yeast
  • 3 tablespoons unsalted butter (very soft)
  • 1 large egg (room temperature)
  • 1 teaspoon kosher salt
  • 3 1/24 cups bread flour

Instructions

  1. Combine the cottage cheese and milk in a blender until smooth. Heat in a microwave-safe bowl until it reaches 110°F (about 45 seconds). Mix with yeast and honey; let sit for 5 minutes.
  2. Add remaining honey, butter, egg, salt, and two cups of flour to the mixture. Mix until combined; then add another 1.5 cups of flour gradually until dough pulls away from sides.
  3. Switch to a dough hook and knead for about 5 minutes or knead by hand on a floured surface.
  4. Place the dough in a greased bowl, cover with a towel, and let rise until doubled (about 1-2 hours).
  5. Shape into about 15-16 balls; place in greased baking pans and allow to rise again for an hour.
  6. Preheat oven to 350°F; bake for 18-22 minutes or until golden brown.
