  • 1 cup flour
  • 11/2 tbsp paprika
  • 1 tsp fresh ground pepper
  • 1 tsp salt
  • 11/2 tsp cayenne
  • 3 eggs
  • 1 tbsp hot sauce
  • Canola oil for frying

Instructions

  1. Prepare the coating by mixing flour, paprika, pepper, salt, and cayenne in a shallow plate.
  2. In another bowl, beat together eggs and hot sauce for the wet mixture.
  3. Tenderize each beef chop using a meat hammer until they are half their original thickness.
  4. Dredge each chop in flour, dip it in the egg mixture, then coat again in flour. Let them rest on a rack for about 5 minutes.
  5. Heat enough canola oil in a heavy pan to reach halfway up each chop; ideally between 360°F and 375°F.
  6. Fry each chop for about 10 minutes total (5 minutes on each side) until golden brown and crispy.
