  • 15.5 oz black-eyed peas, drained and rinsed
  • 15 oz sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup diced red bell pepper
  • ½ cup diced orange bell pepper
  • ½ cup diced red onion
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white grape juice vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. In a mixing bowl, combine black beans, black-eyed peas, and sweet corn.
  2. Add cilantro, red bell pepper, orange bell pepper, and red onion; mix well.
  3. In another bowl, whisk together chili powder, salt, sugar, olive oil, white grape juice vinegar, lime juice, and garlic powder until smooth.
