  • 1/2 cup fresh cranberries (or thawed frozen)
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon olive oil
  • 1/4 cup fresh cranberries (for sauce)
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • Zest and juice of 1 large orange
  • Minced garlic
  • Sea salt
  • Black pepper

Instructions

  1. Pat chicken dry and season with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Cook chicken skin-side down for 5–7 minutes until golden brown, then flip and cook another 5 minutes.
  3. In a mixing bowl, combine fresh cranberries, honey, brown sugar, balsamic vinegar, minced garlic, orange zest, and juice.
  4. Pour the sauce over the chicken in the skillet. Reduce heat to low, cover, and simmer for about 20–25 minutes until the chicken reaches an internal temperature of 165°F.
  5. Let rest briefly before serving; garnish with additional cranberries or orange slices if desired.
