  • 2 Tbsp all-purpose flour
  • 2 cups fresh blueberries
  • 1 cup softened butter
  • 8 oz softened cream cheese
  • 1 ½ cups sugar
  • 1 ½ tsp vanilla extract
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, toss the blueberries with 2 Tbsp of flour to prevent sinking. Set aside.
  3. In a large bowl, cream together the butter, cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, beating well after each addition.
  4. In another bowl, mix the remaining flour, baking powder, and salt. Gradually add this to the wet mixture until just combined.
  5. Gently fold in the floured blueberries.
  6. Pour the batter into greased loaf pans (9” x 5”) and bake for about 45 minutes or until a toothpick comes out clean from the center.
  7. Cool on a wire rack before slicing.
